The Brickyard Barn Inn's
Kerry Apple Cake

This cake does not keep very well, but that is not usually a problem, as you can be sure it will disappear very quickly! It is best eaten warm with cream, Greek-style yogurt, or just a slice of cheese. Enjoy!

Ingredients:
   6oz (1 stick) butter
   6oz (about 2 cups) sugar
   2 eggs, beaten
   8 oz (2 cups) flour, sifted before measuring
   1/2 Teaspoon baking soda
   1 Tablespoon baking powder
   1 Teaspoon salt
   1 Teaspoon vanilla
   2 medium cooking apples, peeled, cored and chopped
   1 teaspoon lemon rind (or 1 teaspoon lemon juice)
   2 Tablespoons Turbinado sugar
   pinch cinnamon
   pinch nutmeg

Directions:
Preheat oven to 350°F, and grease a bread loaf pan. Cream butter and sugar until the sugar is dissolved. Whisk the flour, soda, baking powder and salt together. Gradually add eggs, vanilla, and flour mixture. Stir in apples and lemon rind. Pour into the pan and sprinkle top with turbinado sugar and spices. Bake for 1 to 1 1/2 hours, until the cake tests done. Allow to cool for about 10 minutes, then turn out of the pan onto a cooling rack to finish cooling. (If the cake seems to want to stick, put back into the oven, heat for about 5 minutes, then pull out and invert the cake from the pan immediately.)
